How to prepare matcha?

Preparing your delicious Matcha is child's play:

Prepare the bamboo spoon (to measure the amount of matcha), a bamboo whisk (to dissolve the powder more easily), and a bowl.

  1. In the bowl, pour 1 to 2 teaspoons of Matcha, Add 50 ml of hot water
  2. Whisk vigorously with the bamboo whisk until the matcha is nice and frothy.
  3. Add 100 ml of water or milk (hot or cold)

Does the color of matcha change depending on the flavors?

For our matcha variants with delicious flavors, such as strawberry or mango or coconut, the color may be altered. Indeed, in these cases, the matcha is combined with dried and ground fruits, all sourced from organic farming. Although the color may appear slightly different, the quality remains at the highest level, ensuring an unparalleled taste and nutritional experience.

MANUFACTURING PROCESS

The process of making matcha is a traditional art that involves several precise steps to ensure a high-quality product. Here is how matcha is made:

1. Culture and Shadow of Tea Trees
  • Shade: About three to four weeks before harvest, the tea plants are covered with mats or nets to reduce direct sunlight. This technique, called "shading", increases the production of chlorophyll and amino acids, giving matcha its bright green color and characteristic umami flavor.
2. Harvesting of Leaves
  • Selection: The tea leaves are hand-picked to ensure that only the youngest and most tender leaves are used. This selective picking is essential for producing high-quality matcha.
3. Steaming
  • Color and nutrient fixation: Immediately after harvesting, the leaves are steamed for about 15 to 20 seconds. This step prevents oxidation, preserves the vibrant green color, and maintains the nutrients.
4. Drying
  • Air drying: After steaming, the leaves are slowly air-dried to reduce their moisture content while preserving their color and flavor.
5. Shelling and Sorting
  • Removal of stems and veins: The dried leaves, called "tencha", are stripped of their stems and veins. This process is crucial for achieving a smooth texture and a sweet flavor.
6. Grinding
  • Powder Grinding: The tencha leaves are then ground into a fine powder using stone mills. This slow and traditional grinding process results in an ultra-fine powder, characteristic of high-quality matcha.
7. Packaging
  • Hermetic packaging: The ground matcha is immediately packaged in hermetic containers to protect its freshness, color, and delicate aromas from oxidation.
8. Quality control
  • Rigorous testing: Each batch of matcha undergoes quality control to ensure it meets high standards in terms of color, taste, and texture. Batches that do not meet the quality criteria are rejected.
9. Organic Certification (if applicable)
  • Compliance with organic standards: If the matcha is certified organic, the cultivation and production process must comply with organic certification standards, ensuring the absence of pesticides and chemical fertilizers.
10. Distribution
  • Shipping: The matcha is then distributed to retail outlets or directly to consumers, ready to be used for preparing various drinks and recipes.
