1. Growing and Shading Tea Plants

• Shading : About three to four weeks before harvest, the tea plants are covered with mats or nets to reduce direct sunlight. This technique, called "shading," increases the production of chlorophyll and amino acids, giving matcha its bright green color and characteristic umami flavor.

2. Harvesting the Leaves

• Selection : The tea leaves are hand-picked to ensure that only the youngest and tenderest leaves are used. This selective picking is essential for producing high-quality matcha.

3. Steaming

• Fixing Color and Nutrients : Immediately after harvesting, the leaves are steamed for about 15 to 20 seconds. This step prevents oxidation, preserves the vibrant green color, and maintains the nutrients.
